Here I'll show you how to make Italian Coppa ham yourself. Coppa is a delicate specialty made from pork, typically from the neck or shoulder. This ham is distinguished by its tender flavor, fine marbling, and spicy notes achieved through careful aging. This Coppa ham is additionally smoked and aged in wood ash, giving it a unique taste.
Ingredients:
2 kg pork neck
1 bulb garlic
5-6 bay leaves
70 g curing salt
14 g brown sugar
1 tbsp peppercorns
1 tbsp juniper berries
1 tsp oregano
1 tsp fennel seeds
1 tsp anise
1 tbsp thyme
1 tbsp rosemary
2 tsp nutmeg
2 tsp cinnamon
1 beef casing
