Cold-smoked bacon is made from fresh pork belly, which is first cured and seasoned to develop its characteristic flavor. Then comes the cold smoking, where the bacon is smoked at low temperatures for an extended period to give it an intense smoky aroma. During the curing process, the bacon develops a firm texture and a balanced flavor profile, making it a popular ingredient in many dishes.

Ingredients:

1 boneless pork belly
35 grams of nitrite curing salt per kilogram of meat
Pepper (optional)
Garlic (optional)
Spices (optional)
