How to make ‘Japanese Kaiseki dish’ with $4 tofu at home [Agedashi Tofu]

Today, I prepared the most luxurious dish you can make with simple ingredients you have at home!!
If you watched the previous pork belly cooking video and made the all-purpose soy sauce, you can make it even easier :)

To give you a brief explanation of ageedashi dofu, as the name suggests, age (fried), dashi (kelp broth), and dofu (tofu) are a dish made by soaking fried tofu in kelp broth. In Japan, it is a widely loved dish from home cooking to kaiseki. (The agedashi dofu served at izakaya or kaiseki restaurants is really delicious, but the downside is that it is expensive and the portion size is too small.)

Here's a little tip: drain the tofu as much as possible and then slice it at an angle so it looks much more luxurious when placed on a plate. Also, as I mentioned in the video, if you pour the soy sauce on the tofu in advance,
It gets soggy that it's not good to eat, so you can make the meal much more satisfying by putting the sauce in a pretty jug and pouring it on in front of your guests.


👨‍🍳List of ingredients (for 4 people)

1pack tofu (500g)
100g radish
1 stalk of white part of green onion (for garnish)
5g of chives (for garnish, spring onion can be used)
10 g potato starch
10g katsuobushi
50g all-purpose flavored soy sauce
50g mirin
200g kelp broth

※ All-purpose flavored soy sauce
2 green onions
2 onions
800g soy sauce
Cheongju 600g
600g water
30g sugar
10g katsuobushi
10g kelp

*If you are short on time and use Hondashi product,
Put 200g of water and 1 teaspoon of hondashi in a pot, mix well, then add 50g of dark soy sauce and 50g of mirin and let it boil slightly. It's done! However, there is definitely a difference in taste.
