Today I made the signature dish of Michelin 3-star chef Jean Georges!! I bet there's no place on YouTube that properly introduces how to make this toast (because I haven't been able to find it for years...)

In the summer of 2018, I, working as a second engineer on merchant ship and disembarked in Shanghai after about 11 months of sailing. At the time, I was scheduled to enroll in Le Cordon Bleu, a French culinary school, and I did some research thinking I would stay in Shanghai for 5 days and visit Michelin star restaurants before that.

That's how I found out about Joel Rubuchon and Jean Georges Restaurant, and it was at Jean Georges Restaurant that I experienced fine dining for the first time.The luxurious interior and service, the clean and sophisticated cutlery, and even the bathroom felt so new to me that I had great expectations for the food. And this French toast satisfied me😄 (The pictures at the beginning of the video were taken by me after eating it myself at the time, and each one was incredibly delicious, but the food that shocked me the most was this toast.)

After returning to Korea, I searched many media outlets, including YouTube, and showed pictures to all the chefs I met at the time and asked them how to make it, but all they answered was that they did not know, and even if I made it with Cured Egg or Confit, it was completely different from what I had eaten, so I gave up.

However, after putting together what I have learned little by little while working at Restaurant Jungsik (Michelin 2-starred) and Mosu (Michelin 3-starred), I realized that I can make it now haha.

I made this video in case there was someone who was curious about how to make this toast like me. Even if you don't make it, wouldn't you be able to enjoy it even more if you knew that this kind of care goes into the food made at a restaurant??! :)
