THE GRIDDLE
0:10 Introducing the cast iron grilling grate, also known as a Griddle, which can be used on both sides. One side is flat and the other side has ribs. Such a grill plate insert is what you need when you want to grill pieces of meat with lots of fat, which can then drip on the lit charcoal below. This results in a fatty taste in the air, which makes your grilled food taste nasty, if too much fat drips on the charcoal.

0:44 On the other hand, you can use such a grill plate for grilling toast. In particular, the ribbed grilling grate, makes for perfectly grilled toast. On the reverse side, you can basically put anything you want on it, whatever you can imagine like thin strips of meat or hashed potatoes bacon, eggs sunny side up, because the surface is flat.

SOAPSTONE GRILLING SLAB
1:02 Another type of grilling plate is the so-called Soapstone slab. It's about 1Kg heavier than the cast iron grate. It also has more mass.

So, you might ask, what's the soapstone slab good for? It's good for getting an evenly heated grate surface, in other words you get good heat distribution throughout the flat surface. What causes this to happen? Basically because, it takes the stone mass a little longer to heat up. We're basically talking about ¾ of an hour to heat it up. But once it's hot, it stays hot and distributes the heat a lot better than the cast iron grate.

1:43 Both sides of the soapstone are the same. You won't see any ribs and yet, you can grill some tasty steaks, fish, vegetables and so on; especially good for giving it a nice brown colour. The so-called "Browning" effect which makes your food all so gorgeous. At the same time, juices won't drip on the fire.

CAUTION!
2:05 What's important to bear in mind about the cast iron grate is that it can of course rust. When you wash it and grease it up, don't let it lie around, because then it is quite likely, to rust sooner or later. So it's not just about washing it and letting it dry, as much as simply oiling it after you've done that. For best results protect the surface by applying some grease or special paste, which you can buy in a shop. Then it'll last you a long time to your content.

ONE MORE WARNING
2:35 With the soapstone what you really need to pay attention to, is that you don't bang it somewhere. It's very brittle - if you drop it on the ground it's going to break. So just avoid banging it around.

2:54 A last thing to be mindful of is that it doesn't get temperature shock! The stone must be allowed to heat up and cool down slowly - then all is fine.

To wash it, just put it under the tap then rinse it off and it's ready for the next time.
