How does Kamado Joe's JoeTisserie Rotisserie accessory work?

You can set up the JoeTisserie spit in two ways:

First indirectly and second directly.

If you use the JoeTisserie spit indirectly, you need to insert a deflector plate, a drip tray on it and then close the lid. That means the food turns in a closed grilling area.

If you grill directly with the rotary spit attachment, then it's done in such a way that you grill food directly over the charcoal. Either with the lid closed or open.

Uniform cooking is of course all the better with the lid is closed and, above all, it's faster because the heat is sealed inside. The problem is, if the roast now turns directly over the charcoals, fat drips on to the coals. This cannot be avoided 100%. When the lid is open, this causes the fire to flare up and can lead to a grease fire. This is not good at all.

Once you have closed the lid, it is no longer possible to catch fire. But the grease fumes accumulate in the closed cooking area inside. And if it becomes too much, it has a bad after taste. And that's something you really want to avoid.

THE FIVE MOST IMPORTANT BENEFITS FOR USING A ROTISSERIE IN A CERAMIC GRILL ARE:

1. Uniform cooking on a rotating spit.

2. A crust is formed because the escaping fat is distributed on the surface of the roast.

3. Cooking time is shorter when the lid is closed. So the heat stays inside.

4. You control temperature with high precision with a closed lid and thus can reach any desired temperature.

5. A feast for your eyes when you open the lid and see how the roast turns and forms a crust.

JOETISSERIE TRICK
The trick to prevent the fat from dripping onto the charcoal is for you to use a charcoal basket with one or two small side charcoal baskets. And in the middle below, a drip tray is placed. So you can grill indirectly although you are very close to the charcoals. And the browning effect, i.e. crust formation still occurs and you avoid fat from burning. I have achieved excellent results with this device. No more fat burning, no more negative effects of fat fumes in the interior and on the food to be cooked. That's why I recommend that you do the same.

As already mentioned, the JoeTisserie rotary skewer attachment can be simply attached to the Kamado Joe just like the DoJoe pizza oven attachment. There are two model sizes: The smaller version goes on the Classic 1, Classic 2 and Classic 3. The larger version with the larger diameter fits the Big Joe. The JoeTisserie can also be used on other grills with the same shape with the same diameter. For example on the Big Green Egg Large.
