Ingredients:

1 turkey breast (approximately 1.5 kg)
35 g curing salt per kilogram of meat
1 lemon
2 tbsp honey
2 tbsp rum
1 tbsp juniper berries
3 tsp mixed peppercorns (crushed)

Recipe:

Thoroughly wash and pat dry the turkey breast.

In a bowl, mix the curing salt, grated lemon zest, honey, rum, and juniper berries.

Rub the turkey breast thoroughly with the mixture from all sides.

Seal the meat in a plastic bag airtight or vacuum-seal it.

Place the bag in the refrigerator for 7 days, turning and gently massaging the meat once daily.

After 7 days, remove the turkey breast from the bag. Crush the mixed peppercorns and massage them into the meat.

Wrap the turkey breast in a ham net and hang it in a cool, well-ventilated place for 3 days for air-drying.

Subsequently, cold smoke 4-5 times, with each smoking session lasting 8-12 hours. Allow an equally long fresh air phase after each smoking session.

After smoking, let the ham mature for several days in a cool place until it reaches the desired consistency.
