Ingredients:

250 grams potatoes (diced)
250 grams cauliflower (cut into small pieces)
1 teaspoon pepper
1 teaspoon salt
1/2 teaspoon nutmeg
60 grams ham (optional, if desired)
3 tablespoons Parmesan cheese (grated)
1 tablespoon dill
2 eggs (separated)

Instructions:

Cover the prepared potato cubes and cauliflower pieces in a pot with water and bring to a boil. Let simmer for about 10 minutes after boiling until the vegetables are tender.

Drain the cooked potatoes and cauliflower in a sieve and let them drain. Place the potatoes in a large bowl and mash them with a potato masher until a smooth mixture forms.

Add Parmesan, dill, egg yolks, ham, and spices to the mashed potatoes and mix well until a homogeneous mixture forms. Add cauliflower and mix.

Shape the mixture into about 8 evenly sized balls. Beat the egg whites until stiff in a separate bowl and brush the balls all around with it.

Heat enough oil in a pan. Place the balls in the hot oil and fry for about 6-7 minutes, turning once, until they are golden brown and crispy.

Let the finished potato-cauliflower balls drain on a kitchen paper to remove excess oil.

Serve hot and enjoy!
