I propose a delicious recipe: fake tripe! In fact it looks a lot like it and an inattentive eye could be misled, but this recipe is made with eggs, tomatoes, onions, and little else. What you will get by mixing these ingredients well will be a rustic and very tasty dish, perfect to bring to the table during a family dinner or when you suddenly meet friends. Everyone likes its flavor and its smell is definitely delicious!

The fake tripe recipe is contested by both Lazio friends and my Tuscan countrymen... I don't know exactly where it came from but it's actually a dish that I've had the opportunity to taste in both regions. What is certain is that egg tripe is a cheap dish, of peasant origin, which was often made in homes where meat and even the fifth quarter was definitely a luxury. In a few simple steps, the eggs were cooked in a tomato sauce and cheese was grated over them.

The final effect was and is very similar to Roman tripe and for this reason we were happy with little. This recipe with eggs, however, still makes everyone happy today! Soft and tasty, these strips of tomato omelette are truly irresistible.

► Ingredients to prepare the fake tripe:
Eggs 8
Peeled tomatoes 800 g
Onions 100 g
Carrots 80 g
Celery 70 g
Garlic 1 clove
Basil 1 sprig
Parmesan cheese 50 g
EVO oil 5 tbsp
Salt to taste
Black pepper to taste

To serve
Parmesan Reggiano to taste
