Today I made homemade ginger syrup and sweet and spicy ginger boiled in syrup.
If you have ginger syrup at home, you can easily drink ginger ale just by mixing it with water or soda water☺I recommend adding it to cafe au lait or milk tea as a sweetener.
I used brown sugar this time, but you can make it the same way with any sugar you like.
And since ginger boiled in ginger syrup has a sweet taste, it makes a perfect reserve dish for rice if you cook it with soy sauce in a sweet and spicy sauce.

▷Ingredients:
■Ginger syrup (300 ml)
150 g ginger
150 g brown sugar
200ml water
1-2 cinnamon sticks
1 lemon

■Ginger preserved food
ginger
2 tbsp sake
2 tbsp mirin (sweet cooking rice wine)
2 tbsp soy sauce
1 tbsp white sesame seeds

▷How to make:
1. Scrape off any dirt from the surface of the ginger with a spoon, and slice thinly to break up the fibers.
2. Put ginger slices, brown sugar, cinnamon stick, and water in a pot and bring to a boil. (If the brown sugar is large, soak in water for 30 minutes to dissolve the brown sugar.)
3. Simmer the syrup for 20 minutes, stirring occasionally.
4. Rub the surface of the lemon with salt to wash it, then rinse the salt off with water. Slice the lemon thinly and remove the seeds. (The seeds are difficult to remove later, so it is best to clean them off.) Add the lemon slices to the syrup and simmer for about 1 minute.
5. transfer the lemon and cinnamon to a clean container and pour in the ginger syrup, removing the ginger. Remove from heat and store in the refrigerator for up to 3 months.

6. Put the ginger with the ginger syrup squeezed out into a saucepan, add all the ingredients except the white sesame seeds, and bring to a boil over medium heat.
7. Reduce to a simmer, stirring occasionally, until the liquid is reduced by half. Add white sesame seeds and stir.
8. Store in a container for up to 2 weeks.
