Today I made a rare cheese cake with lots of matcha green tea.
On top of the two layers of rare cheese cake, I decorated it by squeezing matcha and white chocolate butter cream like Mont Blanc.
The rare cheese cake was made using gelatin sheets, but if using powdered gelatin, sprinkle 5 g of powdered gelatin over 30 g of cold water and allow it to soften for 5 minutes, then warm it in a hot water bath to dissolve it.

▷Ingredients (for 15cm round mold)
70g cookies
25 g melted butter

200 g cream cheese
45 g cane sugar
150 ml heavy cream
30g hot water
5 g gelatine sheet
6g matcha green tea
50ml heavy cream

■Matcha Chocolate Cream
80 g white chocolate
15 g matcha green tea
30 g unsalted butter

▷How to make:
1. Crush the cookies into small pieces and add melted unsalted butter. Place the cookies in a mold. 2.
2. Blanch the gelatin in ice water.
3. Beat the cream cheese with the cracked sugar until well blended.
4. Beat 150 ml of heavy cream until loose and add it to the mixture.
5. Squeeze the water out of the softened gelatin board and add it to the hot water to dissolve. Add a little of the rare cheesecake and mix, then add to ④. 150g of the mixture is divided and set aside at room temperature.
6. Add 50 ml of heavy cream, sprinkle with matcha green tea and mix well. Mix with the rare cheesecake mixture and pour over the cookies. Chill in the freezer for 20 minutes to harden the surface.
7. Pour the reserved rare cheesecake mixture over the cookies and refrigerate for 5 hours or longer.
8. Bring the unsalted butter to room temperature in a bowl.
9. Chop the white chocolate, melt it over a saucepan of simmering water, add the matcha powder and mix well. Remove from the water bath.
10. Beat the unsalted butter with a hand mixer and add the mixture in two batches. Squeeze the mixture like a Mont Blanc on top of the rare cheesecake to complete the cake.
