Today's recipe is for icebox cookies made with melted butter.
There is no need to bring the butter to room temperature, and since they are made with rice flour, there is no need for a flour sifter☺.
Cookies made with melted butter have a chewy texture because you don't have to mix the butter thoroughly. This time, I made two kinds of icebox cookies, one with black sesame, which tastes better the more you chew, and the other with chocolate chips cut into larger pieces.
If you like, you can sprinkle granulated sugar around the cookies to make them Diamant-style.
If you put the cookies in the freezer for more than 30 minutes, the dough will harden and it will be difficult to dust the cookies with granulated sugar, so in that case, you can spread a thin layer of water or egg white before dusting with granulated sugar.

▷Ingredients (for 40 cookies) :
1 whole egg
85 g powdered sugar
Pinch of salt
120 g unsalted butter
1 tsp vanilla extract
200 g rice flour
50 g ground almonds

3 tbsp black sesame seeds
70 g chocolate
2 tbsp granulated sugar

▷How to make:
1. Melt butter in a pan of simmering water.
2. Dry roast the black sesame seeds in a frying pan until fragrant and set aside to cool.
3. Beat whole eggs with powdered sugar and salt.
4. Add the butter melted in step (1) and mix well.
5. Add rice flour and ground almonds and mix until powdery. 250 g of the mixture is divided.
6. Add black sesame seeds and crushed sweet chocolate to each cookie dough.
7. Shape the dough into a round shape, wrap in plastic wrap and chill in the freezer for 30 minutes.
8. Sprinkle granulated sugar around the cookie dough as desired, and cut into 1.5 cm pieces.
Bake in a preheated oven at 170℃ for 15 to 20 minutes.
