Ingredients for the chocolate cake (28x18cm)
4 medium-sized eggs
a pinch of salt
16 g vanilla sugar
180 g of sugar
100 ml of milk (room temperature)
100 g of odorless vegetable oil
220 g flour
40 g of cocoa
10 g baking powder
Chocolate cake is baked for about 30-35 minutes at 170 degrees Celsius (340°F) upper-lower heat without convection on medium rail until it is ready and checked with a wooden stick to keep it dry and clean

Ingredients for the custard mass :
500 ml of milk
50 g of sugar
16 g vanilla sugar
40 g corn starch
1 tsp cinnamon
50 g butter

Ingredients for the cream:
300 ml cold whipped cream (min. 30% Fat)
60 g of powdered sugar
16 g vanilla sugar
300 g cold mascarpone

350 g canned mandarins

Some cinnamon for decoration (as requested)
