Ingredients:

50 g brown sugar
1 cup hot water
2/3 cup milk
14 g instant yeast
400 g gluten free flour
4 tsp xanthan gum
3 tbsp psyllium husk
1/2 tsp salt
1 tsp all spice
1 tsp cinnamon
150 g dried fruit
1 tbsp butter melted
1 tsp apple cider vinegar
1 tbsp melted butter (to brush buns)
1/4 cup milk (to brush buns)
100 g gluten free flour (for the crosses)
1 tbsp oil (for the crosses)
1/2 cup cold water (for the crosses)
3 tbsp jam/marmalade

Instructions:

1. Dissolve brown sugar in hot water in a bowl
2. Add milk to mixture
3. Add yeast and mix
4. Cover bowl and allow to rest for 10 minutes
5. In another bowl add sifted flour, xanthan gum psyllium husk, spices and salt
6. Mix dry ingredients
7. In yet another bowl, melt butter, then add apple cider vinegar
8. Add butter mixture and yeast mixture to dry ingredients
9. Mix/knead for 10 minutes
10. Add dried fruit and knead through dough
11. Cover dough and rest for 10 minutes
12. Cut dough into 12 pieces
13. Shape buns into flattish discs and place on oven tray
14. Pre-heat oven to 180C
15. Cover and store buns in a warm place for an hour
16. Mix melted butter and milk together and brush buns
17. Bake in oven for 20 minutes
18. Heat jam in microwave
19. Brush warm buns with jam
