Ingredients

*For the Pulao:*
1 cup basmati and rajmudi rice
1 cup avarekaalu (hyacinth beans), cooked
1 cup mixed vegetables (carrots, peas, beans, etc.)
1 cup fresh methi leaves (fenugreek), chopped
1 onion, sliced
2-3 green chilies, slit
1 tsp ginger-garlic paste
2-3 tbsp oil or ghee
2-3 cups water
Whole spices: 1 bay leaf, 2-3 cloves, 1-2 green cardamom pods, and a small piece of cinnamon
Salt to taste
Fresh coriander leaves for garnish

Instructions

1. *Prep the Rice:*
Rinse the basmati and rajmudi rice under cold water until the water runs clear. Soak it in water for 30 minutes, then drain.

2. *Cook the Vegetables:*
In a large pot, heat oil or ghee over medium heat.
Add the whole spices and let them sizzle for a few seconds.
Add the sliced onion and sauté until golden brown.
Stir in the ginger-garlic paste and green chilies, cooking for another minute.

3. *Add the Vegetables:*
Add the mixed vegetables and sauté for a few minutes until they are tender.
Then, add the cooked avarekaalu and methi leaves. Cook for 2-3 minutes.

4. *Combine with Rice:*
Add the soaked and drained basmati rice to the pot. Gently mix everything together.
Pour in the water and add salt to taste. Stir carefully to combine.

5. *Cook the Pulao:*
