Ingredients:

1 kilogram diced beef
1 large onion, diced
500 grams shallots, peeled
50 ml olive oil
1 cinnamon stick
4 cloves of garlic, sliced
2 tablespoons tomato paste
3 bay leaves
2 tablespoons flour
250 ml red wine (semi-dry)
500 ml veal stock
1 large can peeled tomatoes
Juice of an orange
Salt and pepper to taste
Chopped parsley and fresh oregano for garnish

Stifado Recipe:

Cut the beef into cubes and sear in a deep pan with olive oil until browned on all sides.
Add the diced onion and sauté until translucent.
Add tomato paste and sprinkle with flour to achieve a thickening. Add a little olive oil and stir.
Slice garlic, add shallots, and sauté briefly.
Deglaze with red wine, then add veal stock.
Add peeled tomatoes and stir.
Add orange juice, bay leaves, and cinnamon stick. Bring to a brief boil.
Reduce heat and let the dish simmer covered for about 1.5 hours at low temperature. Add water if needed.
The meat should be tender but not overly cooked.
After cooking, garnish Stifado with chopped parsley and fresh oregano.
Season with salt and pepper and serve as desired with boiled potatoes or pasta.
