Ingredients:

150g Spanish chorizo, diced
50ml olive oil
10 garlic cloves, thinly sliced
150g dry white bread, small cubes
2 tbsp sweet paprika powder
1 tsp salt
1 tsp pepper
3 tbsp apple cider vinegar
2 liters chicken broth
Freshly chopped parsley
3 fresh eggs

Recipe:

Heat olive oil in a pot. Sauté chorizo and garlic briefly.

Add pepper and paprika powder, toast briefly. Deglaze with apple cider vinegar to prevent burning.

Add bread cubes and lightly toast. Season with salt and add chicken broth.

Bring the soup to a brief boil, then let it simmer on low heat with the lid closed for 20 minutes.

After 20 minutes, stir in chopped parsley and fresh eggs. Let the soup simmer for an additional 5 minutes until the eggs are set.

Serve Spanish garlic soup hot and garnish with additional parsley if desired. Enjoy your meal!
