I have several dough recipes for panettone or Easter sweet bread, but this broke my record! I like that in this recipe, nothing is thrown away, and nothing remains!

ingredients
Orange peels in syrup
3 medium oranges
200g / 7,054 oz of sugar
50ml / 1,76oz of water
dough
150 ml / 5,29oz of warm milk
100 g / 3,52oz of sugar
7 g / 0,24oz of dry yeast
100 ml / 3,52oz of orange juice
5 egg yolks
30 ml / 1,058oz of seed oil
650 g / 22,92oz of flour (for bread)
7 g / 0,24oz of salt
100 ml / 3,52oz of melted butter
Vanilla (optional)
Glaze
80 g / 2,82oz of almond flour
50 g / 1,76oz of sugar
1 tablespoon of starch
1 tablespoon corn flour (optional)
4-5 egg whites

100 g / 3,52oz of almonds
50 g / 1,76oz of sugar flakes

METHOD OF PREPARATION
Peel the oranges, cut them into small cubes, put them in a saucepan, add sugar and water. Boil, medium heat, for 10-15 minutes, until the skins soften. When they are soft, separate them from the syrup and let them cool. In the meantime, prepare the dough. Pour the milk, sugar, yeast, juice, egg yolks into a bowl and mix everything together, then add the oil, mix and add the flour and salt. Knead a soft dough, (don't add too much flour!!!!) this dough is soft and sticky!
After the dough has been kneaded, add the melted butter and the syrupy orange peels. Knead for 5-10 minutes, until the butter is homogenized. The dough must be sticky and soft! Cover with a towel and put in a warm place for 1.30 hours. After the dough has risen nicely, it is placed on the work table, greased with a little oil, and loaves are formed, put in the baking form, and covered with a towel. Leave in a warm place for 1 hour. In the meantime, prepare the glaze. In a bowl, combine the almond flour, sugar, starch, corn flour and mix well, then add the egg whites and mix until it becomes a homogeneous dough. Spread on top of the bread, and decorate with almonds and sugar flakes. Immediately after decorating the bread, transfer it to the oven preheated to 175 C / 347 F
Bake for 1-1.15 hours
Temperature 175 C / 347 F
(until it becomes golden brown)
According to the technology, it is good that after baking, it should be put upside down, I used 2 sharp and long wooden sticks, I inserted the sticks into the bread and put it on a large bowl. Thus, after cooling, we get a fluffy bread! It is desirable to consume it after it is completely cooled!
