Homemade Fried Sourdough Donuts. Golden as the sun and soft as a dandelion!

Sourdough doughnuts, family and children's favourites.

We activate the sourdough starter👇🏻
50g / 1,76 oz - of starter (from the fridge)
50 ml / 1,76 oz - of warm milk
50 g / 1,76 oz - of flour
2 teaspoons of sugar.

Ingredients for the dough 👇🏻
150 g / 5,29 oz - of activated sourdough starter (well raised)
350 ml / 12,34 - of cold milk
1 egg
9 g / 0,31 oz - of salt
100 g / 3,52 oz - of sugar
650 g / 22,92 oz - of flour
100 g / 3,52 oz - of soft butter
a teaspoon of vanilla
300 ml / 10,58 - of oil for frying

Ingredients for vanilla cream 👇🏻
300 ml / 10,58 - of milk
2 spoons of sugar
1 egg
Vanilla or vanilla essence
2 tablespoons of cornstarch
A little salt

Ingredients for chocolate glaze 👇🏻
Milk chocolate 200 g / 7,05 oz
1 teaspoon oil (unscented)
Feed the starter, cover and leave at room temperature for 3-4 hours.
When the starter is activated, it is full of bubbles and has doubled in volume, it is ready to work. Put the starter in a larger bowl, add the milk, sugar, egg and vanilla and mix well, then add the flour and salt. Knead the dough for 5-10 minutes until everything is well incorporated, add the soft butter , and knead again until the butter is incorporated into the dough.
Cover de dough, and left at room temperature for 2 hours, (Do sets of stretching and folding after every hour) After 2 hours, put the dough in the fridge.
In my case, the dough stayed in the fridge for about 20 hours.
Roll out on a lightly floured surface to 2 cm thickness. Only use as much flour as needed, because if you add too much these tend to get dense and bready. Cut into the shapes you want, and put the donuts on a baking sheet, and cover with a towel. Do the same with the remaining dough. Let the donuts grow at room temperature for an hour (or maybe more, until you notice that they have increased in volume).
Put the pot or pan on the stove, medium to low heat, and pour in the oil. Let the oil heat up well. After that, put the donuts in a row, and turn periodically, fry them on both sides until they become golden brown. (the first donut is likely to be a little raw in the middle, don't panic! continue with the others, you'll be fine)!
Prepare the vanilla cream.
Pour milk, sugar, vanilla, salt and cornstarch into a saucepan, mix well and put on medium heat, stir continuously until the consistency thickens.
Strain and cover with plastic film, put in the refrigerator until it cools down completely.
After the cream and the donuts have cooled, fill the donuts.
Prepare the chocolate glaze.
Put the chocolate and the oil in a bowl, and melt it in the steam bath or (in the microwave oven, with stops every 10 seconds, and mix)
Dip each donut in chocolate and decorate as you like. Place the decorated donuts in the refrigerator until the chocolate hardens.
