MAMAK STYLE OF MAKING MUTTON SOUP
This recipe I got it from a Chef who revealed his secret to super yummylicious licking soup! The best thing is when you kept it till the next day and have it. That's really ummmph!!! I have no patience in cooking, but this one I strictly followed to get the richness and the right consistency!

INGREDIENTS
2kg mutton | kambing, my selection are ribs and bone marrow for this recipe
50g ginger | halia
5 cloves of garlic with skin 5 cloves of garlic without skin | bawang putih
15-20 cashew nuts | gajus
1/2 cup of shallots | bawang merah kecil
2 tomatoes | tomato
2 potatoes | ubi kentang
1 carrot | lobak merah
1/2 cup fried shallots | bawang merah kecil yg telah digoreng
2-3 coriander roots | akar daun ketumbar
5 green chilies or bird's eye chilies | cili hijau atau cili padi
1 handful of mix coriander leaves, spring onion and celery leaves | daun ketumbar, daun sup, daun bawang
salt | garam
2 tbsp cooking oil | minyak masak
water | air

SPICES
5 star anise | bunga lawang
2 cinnamon sticks | kayu manis
3 bay leaves | daun salam
7 cardamoms | pelaga
1 tbsp cumin | jintan manis
2 tbsp black pepper powder | serbuk lada hitam
2 tbsp white pepper powder |serbuk lada putih
2 sprigs of curry leaves | daun kari
4 tbsp cumin powder | jintan manis
5 tbsp coriander powder | serbuk ketumbar
1 tbsp turmeric powder | serbuk kunyit

(NOTE : YOU CAN REDUCE THE INGREDIENTS TO HALF IF YOU COOKING IN SMALL PORTION)




















































































Method
Heat pan with cooking oil. Add spices (star anise, cinnamons, bay leaves, cumin and cardamoms) and stir for 30secs. Add ginger and garlic. Sauté for 1-2mins. Next, add shallots, coriander roots, curry leaves and green chilies. Cook till no raw smells. Add mutton and stir till combined. After 1-2mins, add cumin, coriander, turmeric powder, tomatoes, carrot, potatoes, salt and water till mutton sink. Mix well. Cook with high heat till boiling. Reduce to low flame and cook for approximately 1hr or till mutton tender. After an hr, add cashew nuts that pounded, white pepper and black pepper. Cook for another 20-30mins, using low heat. Add coriander leaves, spring onion, celery leaves and mix well. Add fried shallots and off the flame.
