NGREDIENTS
1. 4 medium sized red daikon radish (you could the red variety)
2. A cup of rice vinegar (feel free to use white or malt vinegar)
3. 1 small sized star anise
4. 1 small sized cinnamon stick
5. 1 teaspoon of sea salt
6. 2 tablespoon of sugar

INSTRUCTIONS
1. Prepare picking solution by adding water, sugar, sea salt, star anise and cinnamon stick to a pan. Cook on low heat for 3 minutes.
2. Set pickling solution aside to cool down
3. Cut red daikon radish into two, lengthwise, then into thin slices ensuring the slices are similar in sizes.
4. Transfer the red daikon radish slices into jar. Push the slices down so that the jar is tightly packed
5. Add pickling solution until all radish slices are fully submerged in pickling solution.
6. Seal the jar tightly and transfer to refrigerator or consume after a couple of hours.
7. For best result consume after 6- 7 days as the flavours from the pickling solution would have properly infused into the onion slices.

**pickled daikon radish can last for up to 6 months if stored in a refrigerator
****remember to always wash your hands and utensils before making any fermented or pickled food.
