INGREDIENTS
1. 3 large sized carrots
2. 2 sprigs of rosemary (optional)
3. A large thumb of ginger
4. 1 tablespoon of sea salt
5. 2 cups of water

INSTRUCTIONS
1. Prepare brine by mixing sea salt with water
2. Peel and cut ginger into coins
3. Peel and cut carrots into coins or desired shapes
4. Transfer carrots, ginger and springs of rosemary into jar. Push the slices down so that the jar is tightly packed
5. Add brine ensuring that all vegetables submerged in water.
6. Place glass weight into jar.
7. Seal the jar tightly and leave on counter top for 2 weeks
8. After 2 weeks, open and enjoy.
9. Once opened store in the refrigerator
****remember to always wash your hands and utensils before making any fermented or pickled food
