Assalamualaikum,
In this video, I'm going to show you how to make Paya, a delicious and flavorful dish that is a favorite in many South Asian households. We'll walk through the ingredients you'll need, the preparation process, and the step-by-step cooking instructions to create this rich, aromatic curry. Whether you're a seasoned cook or trying this recipe for the first time, I'll provide tips and techniques to ensure your Paya turns out perfectly. Let's get started and enjoy making this traditional culinary delight together!

Ingredients:
- 4 to 6 lamb trotters (paya), cleaned and cut into pieces
- 2 onion, chopped or paste
- 2-3 green chillies, chopped
- 1 tablespoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 1 teaspoon red chilli powder
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1 table spoon crushed black pepper
- or use Paya spice mix
- Salt to taste
- 4 tablespoons oil
- 3 tablespoons yogurt
- Chopped fresh coriander leaves for garnish

Instructions:
1. Heat oil in a pressure cooker or a deep pan.
2. Add chopped onions and sauté until golden brown.
3. Add ginger-garlic paste and sauté for a minute.
4. Add chopped green chillies, turmeric powder, red chilli powder, coriander powder, cumin powder, and salt. Mix well and cook for a couple of minutes.
5. Add the lamb trotters (paya) pieces and mix well with the masala.
6. Fry for a few minutes, then add yogurt and mix well. Cook for another 2-3 minutes.
7. Pour in enough water to cover the trotters, and bring to a boil.
8. If using a pressure cooker, close the lid and pressure cook for about 20-25 minutes or until the trotters are tender. If using a regular pot, cover, and simmer until the trotters are tender, it might take longer, around 2-2.5 hours.
9. Once cooked, check for seasoning and adjust if needed.
10. Add black pepper
11. Garnish with chopped fresh coriander leaves.
12. Serve hot with naan or thick bread.
