Sweet and Sour Red Snapper | A Delicious Blend Of Sweet And Sour Flavors! |Pinoy Simple Cooking

Perfectly pan fried whole Red Snapper fish poured with tangy sweet and sour sauce. This sauce is so good that it compliments with the crispness of the pan-fried Red Snapper fish.

Sweet and Sour Fish can be prepared using fish fillet or whole fish. For this dish I panfried a whole Red Snapper then pour it with this sweet and tangy sweet and sour sauce Filipino style. In the Philippines, it is called ESCABECHE or ESCABECHENG ISDA. Truly delicious your family will love! pi

Red Snapper in Sweet and Sour sauce:
Ingredients:
2 whole Red Snapper washed, cleaned and fins cut off
1/2 cup oil
Salt and pepper

For Sweet and Sour sauce:
1 large onion sliced
1 thumb ginger, julienned
5 cloves of garlic minced
2medium carrots, julienned
2 small bell pepper , seeded and juilenned
3 tbsp tomato ketchup
3 Tbsp vinegar
3 Tbsp brown sugar
1 cup water
2 tbsp oil
1/2 tsp salt
1/4 tsp pepper


For Cornstarch mixture:
1 Tbsp cornstarch
2 Tbsp water

Directions:
1. Clean and descale fish. Fins cut off.
2. Pat dry with paper towel
3. Score fish to cook evenly
4. Season with salt and pepper
5. Heat pan over medium high heat. Add a half cup of oil.
6. Put Red Snapper, cook until golden brown each side.

For Cornstarch Mixture:
1. Mix 1 tbsp cornstarch and 2 tbsp water.

For Sweet and Sour Sauce:
1. In a sauce pan, heat oil over medium high heat.
2. Add ginger, cook for 2 min.
3. Add onion, cook until translucent.
4. Add garlic, cook until lightly browned.
5. Add carrots and bell pepper cook until softened.
6. Add vinegar. Do not stir and let it simmer for about 30 seconds.
7. Add water, and tomato ketchup. Stir to combine.
8. Add brown sugar, stir until sugar dissolves.
9. Lower the heat and let it simmer for about 30 seconds.
10. Add salt and pepper. Stir to combine.
11. Pour the cornstarch mixture while stirring constantly until sauce thickens.
12. Continue to simmer for 10 seconds the turn off the heat.
13. Set the fried fish to a serving plate. Pour sauce over fried fish. Garnish with scallions.
14. Serve and Enjoy!
