Exploring the vibrant flavors of Uzbekistan in Samarkand at Orom-o’tkir Aka Restaurant, where the art of Shashlik and Cow Head reaches new heights! 🇺🇿🔥

The process of preparing the famous and extraordinary Cow Head is nothing short of a culinary adventure! Starting with the meticulous cleaning and cooking of various parts like the cow head, trotters, tongue, and more, each step is a display of skill and tradition. The fragrant spices like bay leaf, cumin, and salt infuse the broth with flavor as it simmers for hours. The end result is a masterpiece of taste - tender meat, flavorful broth, and the aroma of Samarkand bread complementing the dish perfectly.
Next we had the sight of a whole lamb being expertly prepared, its meat carefully divided into sections for various kebabs.
As minced meat is mixed with finely chopped onions soaked in onion water, along with the surprise addition of calf bone marrow, creating a unique and flavorful blend.
We had three tantalizing variations of Shashlik - lamb, beef with calf bone marrow, and bone marrow-free beef - each skewered and grilled to perfection over charcoal, accompanied by the sizzle and aroma that captivates the senses.
We enjoyed the masterpiece by assembling a delectable bite - a skewer of Shashlik nestled in Uzbek bread, topped with pickles, salad, a splash of fresh orange juice, and a drizzle of special sauce, culminating in an explosion of flavors that leaves you craving more.
This iconic Uzbek cuisine experience is a true culinary delight, a masterpiece that showcases the rich and delicious essence of traditional dishes in an unforgettable dining adventure!
