I've been craving crispy spring rolls, but couldn't order them from a restaurant because they're always made with wheat wrappers. I decided to make my own using rice paper wraps and they turned out delicious. This vegetable spring roll recipe is vegan, gluten free, soy free, and SUPER delicious!

If you're not gluten and soy free then feel free to make this recipe using regular egg roll wrappers and use soy sauce instead of coconut aminos. Also, I baked mine but you can definitely shallow fry them for crispier rolls!

Be sure to eat these healthy spring rolls with a sweet and sour dipping sauce. I made a quick sauce by mixing sugar free apricot jam, a splash of vinegar, and coconut aminos together.
