These are Japanese sweet buns covered with crisp cookie dough rolled in granulated sugar- can be filled with flavored cream, custard or can be eaten as is.

RECIPE:
✅ BISCUIT DOUGH LAYER
30 grams ( 2 Tbsps ) softened unsalted butter
35 grams ( 1/4 cup ) powdered sugar
1 medium egg
75 grams ( 1/2 cup ) all purpose flour
1/4 tsp baking powder

✅ BREAD DOUGH
150 grams ( 1 cup ) bread flour / all purpose flour
10 grams ( 1 Tbsp ) powdered milk
15 grams ( 1 Tbsp ) sugar
1/2 teaspoon instant yeast
75 grams / ml ( 1/3 cup ) full cream milk
1 medium egg
15 grams ( 1 Tbsp ) softened unsalted butter
1/4 teaspoon salt
Granulated sugar for rolling the dough

BAKING TIME: 18 - 20 minutes
BAKING TEMPERATURE: 175'C or 350'F
OVEN USED: Convection oven, top & bottom heat
YIELD: 6 pieces

◾It's called Melon Bread because it resembles a rock melon
◾It can have various fillings such as flavored cream, custard, chocolate or caramel
◾Mainly popular among Asian bakeries particularly Japan and Hongkong
◾The bread is soft on the inside but generally firm & crispy outside
◾DIFFERENT OVENS VARY IN TEMPERATURE SO PLEASE ADJUST ACCORDINGLY
