In this video, I will show you how to make a simple Halal Shoyu Ramen which does not contain pork, or alcohol as requested by a few viewers.

This Shoyu Ramen is made with a clear broth (chintan), based on chicken stock with katsuobushi that only requires boiling time of no more than 1 hour. For the ramen sauce (tare), I continue to use a good mix of condiments but only keep to halal ones so that no alcohol is used. Actually most authentic Japanese Shoyu does not contain alcohol, just make sure to check the ingredients list for the Shoyu you are getting. The ramen soup is topped with diced shironegi and yuzu peel which results in tangy, zesty soup which is savoury but still light and refreshing.

As the recipe is simple and the ingredients are quite easy to source, it is really good for beginners who wish to start on handmade ramen at home. The preparation and cooking time does not take more than 2 hours so you don’t have to wait a long time. You can also use pre-made noodles if you do not have a noodle machine :)

As always, I did not use any MSG because I try to use various alternative ingredients to bring out the umami in my own recipes.
