In this video, I will show you my recipe for Gyukotsu Ramen which uses beef bones for the soup base. The richness and natural sweetness that can only be obtained from beef bones in the soup matches well with the noodles for a refreshing flavour.

While Tottori is popular for the region's take on Gyukotsu Ramen, I made my own original version with a modern take on the use of ingredients. For the ramen sauce (tare), it is light, yet deep in umami from the dashi made with dried scallops and kombu. The beef soup was boiled with dried tomato added to enhance the sweetness of the soup. I also created my own blend of porcini paste as the topping, which gives another dimension to the ramen.

As always, I did not use any MSG because I try to use various alternative ingredients to bring out the umami in my own recipes.
