📝 INGREDIENTS for the creamy potato and courgette puff pastry squares:
✔ 2 medium potatoes
✔ 2 large eggs
✔ a pinch of salt
✔ 2 handfuls of parmesan
✔ 1 courgette
✔ pepper to taste
✔ 2 cans of tuna, drained
✔ stringy or lactose-free mozzarella to taste
✔ 1 roll of rectangular puff pastry
📝 INGREDIENTS for the PUFFED, CREAMY AND DELICIOUS POTATO CLOUDS:
✔ 500 g of potatoes
✔ 1 heaped tablespoon of extra virgin olive oil
✔ 50 g of milk
✔ 80 g of smoked bacon
✔ 80 g of diced sweet cheese (in my case the "dolcesardo")
✔ 1 heaped teaspoon of baking powder
✔ 1 egg yolk
✔ 2 egg whites
✔ salt to taste
📝 INGREDIENTS for CREAMY, STREANY PAN-FED POTATO SANDWICHES, without butter, without milk:
✔ 800 g of potatoes weighed in their skin
✔ 2 large eggs
✔ salt to taste
✔ 2 tablespoons of extra virgin olive oil
✔ 4 tablespoons of parmesan
✔ approximately 4 tablespoons of breadcrumbs
✔ extra virgin olive oil and breadcrumbs to taste.
✔ fill as desired: stringy, lactose-free mozzarella, stracchino, cooked ham...
📝 INGREDIENTS for the stuffed potato rolls, without butter:
✔ 500 g of raw weighed red potatoes in their skin
✔ 1 egg
✔ 3 tablespoons of parmesan
✔ salt to taste
✔ 1 tablespoon of extra virgin olive oil
✔ 4 - 5 slices of cooked ham
✔ 4 - 5 slices of smoked provola
