♡ ✰ 😍 Hello all friends, here I am back with a new sweet gluten-free recipe dedicated to Easter. This time an ancient Sardinian recipe from my grandmother: the ricotta cake just like it was once made, plus the perfect custard taught to me by herself at the age of 90. A smooth, velvety cream without lumps and very easy to make because it is super quick to make. Tradition has it that in our family this cake has been prepared for years during the Easter period... either without cream and chocolate chips, or with sultanas or with candied fruit. Excellent and special in every way. Extremely fragrant thanks to the peels of Sardinian lemons which give it an amazing flavour... and delicious and with a very soft consistency thanks to the presence of Sardinian ricotta, rigorously and obviously made from sheep's milk. Proposal for you for Easter but suitable for any time of the year. I really hope you will enjoy following the whole process and trying it for yourself. 📝 INGREDIENTS for the custard:
✔ 400 ml of milk
✔ 100 ml of fresh unsweetened cream
✔ the peel of an organic lemon cut into strips
✔ the seeds of a vanilla bean
✔ 4 egg yolks (from large, very fresh eggs)
✔ 150 g of sugar
✔ 30 g of rice flour
✔ 20 g of corn starch (maizena)
📝 INGREDIENTS for the cake:
✔ 200 g of sugar
✔ 3 large eggs at room temperature plus an egg white
✔ the grated zest of an organic lemon
✔ a pinch of salt
✔ 250 g of sheep's ricotta (very dry) and at room temperature
✔ 3 heaped tablespoons of fresh unsweetened cream
✔ 150 g of rice flour
✔ 150 g of potato starch
✔ 1 sachet of 16 g of vanilla and gluten-free baking powder
✔ extra dark chocolate chips to taste. (or raisins, or chopped dried fruit or candied fruit)
♨ COOKING:
✔ springform cake pan with a diameter of 26 cm
✔ 180° in preheated oven, in the center for approximately 40 minutes
