►Ingredients For the Chicken Korma

►Chicken Prep

1.5 kg or 3.3 lbs chicken
1/2 cup distilled vinegar
1 tbsp salt

►Spices

1/2 tsp black peppercorns
1 tsp fennel seeds
1 tsp cumin seeds
2 tsp coriander seeds
4 green cardamoms
3 cloves
1 black cardamom
1.5 inch cassia bark

3 bay leaves
1 star anise
1 black cardamom
4 green cardamom
1 inch cassia bark
3 cloves
4 whole black peppercorns

Small piece of nutmeg and mace
1 tsp coriander
1/2 tsp cumin
3 black peppercorns

2 tsp red chili
1 tbsp kashmiri red chili
1 tsp turmeric
2 tsp salt (or to taste)

►Other Main Ingredients

300g red onions to make 90g barista
40g garlic
35g ginger
500g natural yogurt (whisked or blend it until smooth)
4 - 5 tbsp cashew almond paste (optional)
1/2 cup or 120ml melted ghee
1 - 2 green bullet chilies
Could mix in some water (once korma is ready)
1 tbsp kewra water
Fresh coriander, chili and ginger for garnishing

► For the Naan

1 tsp yeast
1 tsp sugar
1/2 tsp baking soda
1/2 tsp salt
Below ingredients are at room temp
2 tbsp natural yogurt
1/2 cup Lukewarm water or milk (use more if needed)
1 tbsp oil
300g plain flour
Knead the dough until soft and rest
Brush with ghee
