2 tsp ground green cardamom
1 tsp cloves
1/2 tsp nutmeg
1 tsp ground cinnamon
1 tbsp cumin
1.5 tbsp coriander
1 tbsp black pepper

►Marinade

2kg or 4.4lbs chicken thighs
1 cup yogurt
7 garlic cloves
Juice of a lemon and zest
2 tbsp vinegar
1 tbsp roasted chili paste
1.5 tbsp tomato paste
3 tbsp spices
1 tbsp red chili
2 tsp turmeric
2 tsp ginger powder
2 tsp onion powder
1 tbsp paprika
2 tsp sugar
1 tbsp salt
7 tbsp sunflower oil
1 large tomato


►Garlic Sauce

1 cup or 140 grams peeled fresh garlic cloves (remove sprouts)
1 tsp salt
2 tbsp lemon juice (add more as desired)
515ml sunflower oil

►Chicken Shawarma Prep

Lebanese bread
Salad
Garlic and red chili sauce
Sliced chicken shawarma
1 tbsp fresh hummus per shawarma
1/2 tsp sumac per shawarma

Serve with fries as well
