Iekei Ramen 家系ラーメン comes from from Yokohama city of Kanagawa Prefecture, featuring rich pork bone soup, soy sauce, and thick straight noodles.. It originated from "Yoshimura family" which opened in 1974.

For my recipe of Iekei Ramen, I use pork bones with chicken carcass, boiled over long hours, with more pork bones added over time to add dimensions to the soup umami. The ramen broth is complimented by my blend of shoyu tare, chicken oil for to bring out the richness of Iekei Ramen and great flavours. It is matched with the traditional toppings like chashu, spinach, seaweed and marinated quail eggs. I also made handmade noodles from scratch, boiled for 3 min for thicker straight consistency.

As always, I did not use any MSG because I try to use various alternative ingredients to bring out the umami in my own recipes.
