A traditional hyderabadi dish, this hara bhara kebab looks delectable and tastes even better!

HARA BHARA KABAB

Ingredients

8-10 spinach leaves, blanched and finely chopped
3-4 medium potatoes, boiled, peeled and grated
¾ cup frozen green peas, boiled and mashed
2 tablespoons chopped fresh coriander leaves
2-3 green chillies, finely chopped
1 inch ginger, finely chopped
1½ teaspoons pinch chaat masala + as required
½ teaspoon + a pinch garam masala powder
2 tablespoons cornstarch + for dusting
Salt to taste
Oil for greasing and deep-frying
1 teaspoon butter
¼ cup frozen green peas, boiled
½ medium green capsicum, cut into strips
Mixed capsicum curls for garnishing
Green chutney for serving

Method

1. Heat sufficient oil in a kadai.
2. Mix together spinach, potatoes, green peas, coriander leaves, green chillies, ginger,1½ teaspoons chaat masala, ½ teaspoon garam masala powder, cornstarch and salt in a bowl.
3. Grease your palms with some oil, divide the vegetable mixture into equal portions and shape into tikkis. Place on a plate dusted with some cornstarch.
4. Heat butter in a non-stick pan. Add capsicum and green peas, toss and cook for 1 minute.
5. Put the tikkis in hot oil and deep-fry till golden brown and crisp. Drain on absorbent paper.
6. Add a pinch chaat masala and remaining garam masala to tossed capsicum mixture, toss and cook for 1-2 minutes.
7. Put the tossed capsicum-green peas mixture in the center of a serving platter and place the fried tikkis around it. Sprinkle some chaat masala, garnish with mixed capsicum curls and serve hot.
