HARA BHARA KEBAB RECIPE INGREDIENTS (makes approximately 12 Hara Bhara Kebabs):
500 grams Potatoes (peeled, sliced and boiled)
1 Medium White Onion
80 grams Ginger finely chopped
Green Chillies (use more or less according to your taste preference)
1 bunch fresh Green Coriander leaves
Oil (for sauteeing + for deep frying)
1/2 bunch Mint leaves
1/2 tablespoon Cumin Seeds
1 teaspoon Salt
1 teaspoon Crushed Coriander
Green Peas (lightly crushed, not a paste)
1/2 tablespoon Ground Black Pepper
1 tablespoon Spinach Puree

The above mixture is cooked and mashed (note: the mixture should be cooled down before forming into patties).

VEGAN BATTER RECIPE:
Flour
Pinch of Salt
a touch of Black Pepper
Water
This batter is used to dip the Hara Bhara Kebab, before coating with the Panko Breadcrumbs.

Once the Hara Bhara Kebabs have been fried they should be served straight away whilst they are still crisp.

At Tindli restaurant the Kebabs are served with
Pineapple & Red Onion Katchumber (seasoned with Salt, Chilli Powder, Oil)
Mint & Coriander Chutney
Tamarind
Sprinkled with Tomato & Garlic Dry Chutney

Chef Manoj was born into a farming family, (they didn't have a fridge or freezer) so the family were always used to using fresh ingredients in their kitchen. He first learnt cooking from his mother and grandmother at home.

Asking himself and thinking what is the best food in the world? and what makes certain people live to 80 or 100 years old? all the clues were pointing to having a correct diet; he used the knowledge from his learning experience and incorporated that into his style of cooking i.e. creating good Indian food with real honest passion, and good quality ingredients, no artificial colours or preservatives, and using healthy oils.

Tindli restaurant opened last year and has had a lot of great reviews; the restaurant is run by Head Chef and Patron Manoj Karnavar who has worked in world class, leading high end five star hotels in India, Dubai and the UK, hotel restaurants such as Marriot, Fairmont, Savoy, Claridge's, Mandarin Oriental in Hyde Park and has been fortunate enough to have worked alongside top Michelin starred chefs.
