Super fruity strawberry cake with a delicious Mascarpone cream and a Sponge Cake, that is guaranteed not to get soggy. Without pudding and without gelatine! If you like, you can replace all or part of the Mascarpone with Cream Cheese, Creme Fraiche, Ricotta or Quark.

Since the Sponge Cake doesn`t become soggy, you can prepare this strawberry cake the day before. However, to ensure that the Cake doesn`t become soggy, it must be spread evenly with chocolate and only topped after the chocolate has hardened.

If you pack the Sponge Cake in an airtight container after it has cooled, you can also freeze it. Defrosting only takes a few minutes, so you always have a Cake Base at home.

👩‍🍳 Ingredients: for a 28 cm fruit cake tin:

🔸 For the Cake Base (sponge cake):
4 tbsp (50 gr) melted, cooled Butter or Margarine
3 Eggs
½ cup (120 gr) Sugar
2 tsp (1 sachet) of Vanilla Sugar
1 pinch of Salt
1 cup (125 gr) of Flour
½ - 1 tsp Baking Powder
Lemon Zest (optional)

For the Mascarpone Cream:
5 oz (120 gr) Mascarpone (alternatively Cream Cheese, Ricotta or Quark)
4 - 5 tbsp (60 ml) Heavy Cream
1 sachet of Whipping Cream Stabilizer
3 - 4 tbsp Icing Sugar
Lemon Juice to taste

For the Cake Glaze:
1 sachet Cake Glaze (red or clear), alternatively Jello (strawberry)
250 ml Water or red Fruit Juice
2 tbsp Sugar (not necessary, when Fruit Juice)

Besides that:
1 - 1,5 lb (500-600 gr) fresh Strawberries
