This baba ganoush without tahini is made with oven-roasted eggplant, pomegranate seeds, chopped bell peppers, pomegranate molasses, mashed garlic, and lemon juice.
Baba ghanoush without tahini tastes entirely different, especially when paired with pomegranate molasses.
The best way to make baba ghanoj is by using an oven and no tahini.
This baba ganoush plate (aubergine dip) is a healthy appetizer all the family will fall in love with it.

Ingredients:
- 3 medium-sized eggplant
- 1/2 bell pepper
- 1 whole lemon
- 3 garlic cloves
- Himalayan salt
- Pomegranate molasses
- 1 bunch of fresh parsley

Recipe:
- Cut the eggplant in half.
- Pierce the skin and place the eggplants face down on a parchment paper.
- Roast the eggplant at 200C for about 30 minutes.
- Allow the cooked eggplant to cool to room temperature.
- Remove the skin of the eggplant, and place the roasted eggplant flesh in a large bowl.
NB: You can keep the eggplant chunky or blend the roasted eggplant in a food processor.
- Chop the bell peppers and parsley.
-Squeeze the lemon, and mash the garlic.
- Add the roasted eggplant, bell peppers, lemon juice, mashed garlic, pomegranate molasses, salt to a serving bowl.
- Add a drizzle of olive oil and sprinkle chopped parsley on top.
