A typical recipe of my land, the Calabrese Rice Meatballs, a sort of Arancino but without breading!
Yes, without any I panaturam they are prepared and fried! Born as a recipe for recycling, if cooked rice was left over, these delicious meatballs were prepared! Grandmother always made the rice advance to be able to accommodate us!
Make them again they are really delicious! I cooked the rice with a pozzoco of saffron (but if you want you can leave it white) and you can stuff them to your taste with ham and cheese or leave them simple as my grandmother used to make them!
