In this episode we will make a pure deliciousness wrapped up in a pillowy dough. A rustic calzone made in the Italian way in our wood fired oven.

We start by adding the sugar to our lukewarm water, followed by the dry yeast. We leave it for 10 minutes so the yeast starts working. You will see that it will form a nice foam on top. When the time is up we add the rest of the water and 2 tablespoons of extra virgin olive oil.
For the flour mix We use 2 types. 1/3rd plain flour and 2/3rds of semolina. We add the salt and we mix them well together to dilute the salt. We gradually add the flour mix to our liquid and we make our dough. The dough needs to be tacky to the touch but not sticky. If you can let it rest for at least 24 hours. If you can`t then let it rise for two hours.
Our dough is resting so we proceed to the pizza sauce. We make a fresh classic sauce which doesn`t involve cooking. We squeeze the peeled San Marzano tomatoes. Always use the best quality tomatoes you can. We add some fresh basil, some salt and ground pepper. We give it a mix and last a touch of olive oil. Feel free to add any spice you want. We usually keep it simple. The ingredients for the topping are up to you.
The ingredients are sliced and ready so we portion and shape our dough. Our dough is nice and stretched so we proceed by adding the sauce. We will make calzone so we spread the sauce only on the half of it. We add the rest of the ingredients and we fold the dough and gently press the edge with our hand. Always add a touch of sauce on top as the last step. It looks better when its done.
If you are in a artistic mood and you want to make something special then add some cheese on the edge of the tough, fold it over and close it. We always add a piece of wood on the coal in order to give a smoky hint to our pizza.
The Baking time is roughly 3 to 4 minutes. Depending on the temperature. The end result is heavenly.
