Delicious rolls of glutinous rice with tasty and spicy fillings of dried prawns, toasted coconut and other spices.

Ingredients
300g glutinous rice ( preferably soaked overnight )
200 ml thick coconut milk
1 tbsp sugar
1/2 tsp himalayan pink salt
1/2 tsp mushroom granules

Banana leaves ( 6x5 inches )
Toothpicks ( cut into halves )

Fillings
60-80g grated white coconut ( toasted until golden brown and grind finely)
50g dried prawns ( soaked until soft, keep water)

To be blended
4 shallots
3 cloves of garlic
1 red chillies
2 small pieces cekur root

Seasonings
1 tsp himalayan pink salt
2-3 tsp sugar
1 tsp coriander powder
A few dashes pepper
2 -3 tbsp soaked dried prawn water

Drain glutinous rice. Transfer into a pan and steam for 20 mins. Add coconut milk together with seasonings and back to steam for anther 15 mins. After 15 mins take out and let it cool. Get ready banana leaves and tooth picks. Fry filling ingredients. Add 2 tbsp of oil in a heated pan, add blended ingredients, dried prawns and toasted coconut. Fry until aromatic then add the the seasoning ingredients. Let it cool.

Place 2 tbsp of glutinous rice in the center of leave, add 2 tsp of fillings and top with another tbsp of rice. Roll up and secure both ends with toothpicks. Continue with the rest. Brush with oil and transfer into airfryer or oven. Bake at 200 degrees celsius for 15-20 mins. Done.
