Beans have been a staple in our curries and stews, so why not switch things up? Let’s whip up some dry roasted beans (varuval) and see beans in a whole new light. This budget-friendly recipe takes under an hour to prepare and pairs wonderfully with hot rice, buttermilk or yogurt, and can even be tossed into salads or soups, or enjoyed as a snack on their own. They come out crispy and are generously coated with flavorful spices.

Full Recipe
Ingredients 🧅🧄🥬🌶️
For Boiling beans
¼ cup (50g) green mung beans
¼ cup (47g) red beans
Method
Wash and boil beans for 20 minutes, do not soak beans prior.
The beans don't have to be soft, just nice enough to bite through.
For making aromatic infused oil
3 tbsp cooking oil
1 medium onion ¾ cup or (90g), sliced thin
4 cloves garlic (15g), sliced thin
7g ginger, julienne
1 small green chili, chopped
8-10 NOS curry leaves
1 tsp turmeric
½ tsp himalayan salt
Seasoning mixture
1 tsp mustard seeds
1 tsp cumin seeds
1 tsp coriander seeds
1 tsp fennel seeds
½ tsp himalayan salt
