High Protein Vegan Soups - Cozy Winter Dinner Ideas
VEGAN TACO SOUP
Ingredients:
Oil: 2 Tbs
Onion: ¼ cup
Garlic: 1 Tbs
Chickpeas (Drained and washed): 1 can (400g)
Red Beans (Drained and washed): 1 can (400g)
Sweetcorn Kernels (Drained and washed): 1 can
Tomato chopped: 1 can
Taco Seasoning: 3 Tbs
Vegetable Stock: 4 Cups
Cilantro: 2 Tbs
Garnish with Tortilla chips, Avocado, Cilantro, and lemon slices.

CHICKPEA QUINOA SOUP
Ingredients:
Oil: 1 Tbs
Onion: ¼ cup
Garlic: 1 Tbs
Celery: ½ cup
Carrots: ½ cup
Tomatoes: 1 cup
Chickpeas: ½ cup
Quinoa: ½ cup (washed and Drained)
Salt: 1 Tsp
Chili Powder: ½ Tsp
Turmeric Powder: ¼ Tsp
Coriander Powder: ¼ Tsp
Curry Powder: ¼ Tsp
Vegetable Stock: 4 Cups
Lemon Juice: ½ lemon
Cilantro: 2 Tbs
Bring to boil and let it simmer for 25 to 30 min. Garnish with coconut cream and lemon wedges. Serve

LENTIL AND SPINACH STEW
Ingredients:
Oil: 1 Tbs
Onion: ¼ cup
Garlic: 1 Tbs
Cooked Lentil: 1 can (400g)
Tomatoes: 1 cup
Salt: 1 Tbs
Chili flakes: ½ tsp
Dried Rosmery: ½ tsp
Oregano: ½ Tsp
Mixed Herbs: ½ Tsp
Green Chilies: 1
Lemon Juice: ½
Vegetable Stock: 3 Cups
Baby Spinach: 2 Cups
Bell peppers: ½ cup
Serve with nutritional yeast, avocado, cherry tomatoes, and bread.
