For the penne:

3 cups dry pasta
Lots of salted water for boiling
Cook about 6-8 min

1 cup mushrooms
1/2 cup diced onion
1 tbsp (or to taste) chopped garlic
1/2 cup wine or vodka
1/4 cup tomato paste
1/2 cup heavy cream
1/2 cup (or more) pasta water
1/8th tsp (or to taste)Chili flakes
1/2 tsp dried basil
Salt and pepper to taste
1/4 cup Parmesan cheese

For the thick noodle (pappardelle) sauce

1/2 cup diced onion
1 cup assorted mushrooms
1 tbsp chopped garlic
1 tsp chopped thyme
1/2 tsp chopped rosemary
(You can use other herbs)
1/2 cup white wine
1.5 cups heavy cream
1/2 cup Parmesan cheese
Salt and pepper to taste
