0:14 Making home made Pizza on the grill isn't really hard to do.
But it doesn't always turn out just as you like it.

So what's the problem?

Usually you have too much heat on the bottom and too little heat on top. And this problem results in a burnt crust and the top isn't cooked enough. The cheese hasn't fully melted and that is usually the frustrating thing sometimes because everybody likes a well baked pizza.

0:37 KAMADO JOE has come out with the DoJOE a so called pizza oven accessory. A very interesting and innovative product. An accessory that you can easily place in your ceramic grill. And with it you can perfectly distribute upper heat and lower heat in your ceramic grill. So, this results in an evenly and nicely browned pizza crust, as well as a perfectly baked pizza with wonderfully melted cheese on top. And then you can enjoy a wonderful pizza, a huge treat that is a pleasure for all. Even those with less experience can achieve great results.

1:15 So how does the DoJoe work?

First you need to heat up the grill. You pour in the coals, light 'em up and bring them to temperature. Preheat them to around 230 degrees Celsius. I recommend you do that for about 20-30 minutes so that we have it nicely heated under the lid and throughout the whole grill internally. Afterwards you lift the lid and insert the DoJoe, the pizza accessory once positioned, you close the lid and latch it together.

But there is a catch!

You need to make sure to properly seal the lid in order to ensure no hot air escapes the lid and the accessory if you want to control and maintain a steady temperature. Make sure you completely close the Top Vent up top. At this point the temperature inside the grill is controlled through the bottom air vent. Slide it so that you have a small opening, of about 1 cm at approximately to keep at 230 degrees Celsius, or 1/3 open to reach around 280 degrees Celsius or open it fully to reach around 340 degrees Celsius.

#3 Thirdly, easy temperature control can be achieved, which can be done by operating the ventilation slide as well as an even heat distribution on top and bottom, which results in baking the perfect pizza.

And now, here is another point: the perfect wood-fired oven flavour.

And another tip! If you're not a big fan of kneading your own dough, in fact, if it's not your thing, and you don't want to buy it from a wholesaler, and you want something of good quality, then talk to your local bakery. They are the professionals and should be able to prepare the perfect pizza dough, which you can then prepare yourself.

It's that easy!

2:55 PIZZA DOUGH TIPS and TRICKS!
Once you get a nicely proven pizza dough you can roll it out and know it into shape, or you can try throwing it up in the air, and twirling it around, but do so at your own risk! Yup, you may need to practice a bit! Then, just add your favourite toppings. Then slide it in with your Pizza peel into the DoJoe, which you have carefully installed.

3:33 And here's another tip!

If you don't want your dough to stick to the pizza shovel, then use parchment paper. It helps to make sliding your pizza in and out much easier. It also prevents the flour from burning if it has too much flour, which can turn brown by the heat. And don't forget - for some extra tears of joy use some «Olio e Peperoncino» or our very own Habanero Chili Sauce.
