hello everyone!
I made a birthday cake for my husband last weekend.
My husband actively accepted my husband's opinion that he hates chewing raspberry seeds, so I made it and it's delicious. haha

It had cream cheese in it and it tasted similar to Haagen-Dazs strawberry flavored ice cream.
The cream is thick, so icing is easy. Even beginners can make it easily!

➡Ingredients for 15cm cake

✔ Matcha sponge cake
150-160 g eggs
85g cake flour
5g matcha(green tea) powder
88g sugar
1g salt
7g Honey
2-3g vanilla bean paste (or extract)
20g milk
20g unsalted butter

✔Raspberry Jam
(The video is 2 times)
120g Raspberry puree
60 g frozen raspberries
45g Granulated sugar
5 g lemon juice

✔Raspberry Cream
400g Heavy cream
70g cream cheese
25g sugar
95g Raspberry Jam

✔ Sugar Syrup
50g water
30g white sugar
5g Kirsh (optional)


✔If using only frozen raspberries, add 10g of sugar, and if using only frozen raspberry puree (containing sugar), add only 40g of sugar.
As a tip, it's better to increase the amount like I did. If you boil too little, it can be difficult to boil down.
✔Genoise and raspberry jam are good to make the day before.
✔The finished cake is more moist and soft if you eat it after refrigerating for a day.
✔ It is recommended to eat within 3 days of refrigeration.
