In this video, I suggest you cook the knuckle in a mixture of vegetables and spices that bring out the wonderful flavour of the knuckle. And then bake the pork shank in the oven with a delicious sauce. This recipe is a great alternative to a knuckle in a beer. Try making a roasted knuckle with this simple recipe, I'm sure you'll love it.

Ingredients:
2 pork knuckles (1200g each).
About 2 l water
1 large onion
1 large carrot
200g celery root
Parsley stalks
Spring onions
1 tablespoon juniper berry (optional)
Allspice pepper
2 real star anise
3 bay leaves
2 ½ -3 tablespoons salt (broth must be well salted).

For the sauce:
2 tablespoons honey
50ml light beer
50ml soy sauce
Pepper mix
2 tsp tomato paste

Cook for 1.5-2 hours (depending on the size of the knuckle)
The knuckle should be almost done
Bake at 180°C for 60 minutes

Salad:
300g young potatoes
200g radishes
Thyme
Salt
Olive oil
100-150g cherry tomatoes
Thyme, black pepper
salt to taste
Spring onions
