Today’s dish is tangsuyuk (sweet and sour pork) mixed with garlic.

Maneul tangsuyuk (Garlic-flavored sweet and sour pork)

[Ingredients]

*Deep-fried garlic and pork

Pork sirloin 500g
Frying powder 1 & 1/2 cup (160g)
Cooking oil 3 tbsp (20g)
Cooking oil (for deep-frying) 1.8L
Water 2/3 cup (120g)
Peeled garlic 1/2 cup (50g)
Dark soy sauce 1 tbsp (10g)
Pepper 1g
Fine salt 1g

*Sauce

Brown sugar 6 tbsp (60g)
Vinegar 4 tbsp (40g)
Dark soy sauce 2 tbsp (20g)
Minced ginger 1/4 tbsp (3g)
Cucumber 30g
Carrot 30g
Onion 30g
Water 1 & 1/2 cup (270g)
Water (for starch water) 2 tbsp (20g)
Starch powder 1 tbsp (10g)


[Directions]

*Deep-fried garlic and pork

1. Cut pork sirloin into 1-cm long sticks.
2. Trim off the ends of garlic and chop roughly.
3. Season the pork sirloin with chopped garlic, flavoring salt, dark soy sauce, and pepper.
4. Once the pork is seasoned, add frying powder, water, and cooking oil to make the batter.
5. Preheat the oil for deep-frying다.
6. When the oil is heated, add one piece of pork at a time.
7. Deep-fry the pork for 3 – 5 minutes until golden.
8. Remove the fried pork from oil and drain the oil.
9. Wait until the oil temperature goes up and deep-fry the pork one more time for 30 seconds to 1 minute.

*Sauce

1. Cut cucumber, onion, and carrot into thin bite-sized slices.
2. Add the veggies, brown sugar, vinegar, dark soy sauce, and water in a pan and let boil.
3. Add minced ginger if desired and keep boiling.
4. Mix starch powder and water to make starch water.
5. When the sauce boils, add the starch water to get the desired consistency.
