Hi Guys, welcome to EPISODE #12 in which we continue the "Let's talk about Food" series.

In this video I show you how eating healthy doesn't need to be complicated and share with you another easy plant-based recipe - this time FAJITAS πŸ‡²πŸ‡½

Whether you are a vegan, vegetarian or someone who eats meat, I think the same basic principles apply to making well-balanced and nutritious meals. This being, tying to include at least one (or more) portions of fruit or veg with every meal and eating varied and (naturally) colourful foods πŸ…πŸ₯‘πŸŒπŸ₯¦πŸŒΆπŸ₯•

Being busy with work and family life generally means that dinners in our house have to be quick and easy, as well as nutritious. In this video I show you one of my go-to plant-based recipes using only a handful or ingredients you can easily find in the supermarket πŸ›’

If you've seen any of my other cooking videos, you know I'm all about things which can save time; from jars of sauces to packets of microwave rice, they're all good with me if they can help me prepare a healthy meal. However even when I was a meat eater, my Fajita recipe was something I always cooked from scratch. This gives me the opportunity to experiment with various ingredients from time-to-time and try new variations of the dish (so I encourage you to do the same) but I do have to say I think that this particular recipe is dam pretty good πŸ˜πŸ‘πŸ»

πŸ“What you'll need to make approx 4-6 Fajitas:
4-6 Tortilla Wraps
1 bag of Quorn Fillets (6 fillets)
1 Large White Onion
2 Large Peppers (Any colour)
2 Tsp Tomato Puree
2 Tsp Ground Smoked Paprika
2 Tsp Ground Paprika (regular)
2 Tsp Ground Cumin
2 Tsp Ground Coriander (Fresh also good)
Large Pinch of Salt
Lemon / Lime Juice (a few large dashes or 1/4 of a Lime)
1-2 Tsp of Maple Syrup (Optional)
1-2 Tsp of Chipotle Tabasco Sauce (Optional)
Hummus (Any variation works great)

But don't worry meat eaters, if this recipe STILL doesn't tempt you, you can still try out the recipe because here I make two separate versions of the dish, one using Quorn Fillets (for me πŸ™‹πŸ»β€β™‚οΈ) and one using chicken fillets (for my wife πŸ™‹πŸΌβ€β™€οΈ)
