MASALA CHANA
Ingredients
1/3 cup Bengal gram ¼ tsp. cumin seeds
1 small piece red chilli ½ tsp. red chilli powder
1 tsp. Bojwar masala few curry leaves
½ tsp. ginger-chilli paste 1½ tbs. oil
Sprigs of coriander, chopped salt to taste

Method
Soak Bengal gram overnight and pressure cook till they turn soft. Heat oil, add red chillis, cumin seeds, curry leaves, ginger-green chilli paste, Bengal gram and cook.

Nutrition
Bengal gram is high in protein, fibre, carbohydrates, several vitamins. manganese, phosphorous, iron and copper make this a healthy food option.

SUJI KA HALWA
Ingredients
1/3 cup Bombay rawa ¼ cup sugar
3 tbs. ghee Pinch of saffron
2 cashew nuts, chopped 2 almonds, chopped
2 pistachios, chopped ½ tsp. chironji
1 tsp. raisins pinch of cardamom powder

Method
Dry roast rawa, add ghee and cook till the ghee separates. Add water and cook till all the water evaporates. Add sugar and cook till the sugar melts. Add cardamom powder and put off the flame. Transfer to a serving bowl and garnish with dry fruits. Serve hot or cool.

Nutrition
Wheat sooji is rich in B vitamins, iron, protein and fibre. Ghee is rich in fat, vitamins A, D, E, K

UDAD DAL KA VADA
Ingredients
¾ cup black gram oil for frying
¼ tsp. cumin seeds ¼ tsp. asafetida
2 tbs. oil small piece of red chilli
Sprigs of coriander, chopped salt to taste

Method
Soak black gram for 2-3 hours. Drain the water and grind to a coarse paste adding little water. Add asafetida, salt, oil and coriander leaves, mix well. Put small portions of the dough into hot oil in a wok and deep fry over a medium flame to a golden brown colour.

Nutrition
Black gram is rich in protein, vitamin B complex and fibre. Iron, copper, calcium, magnesium, zinc and potassium are the minerals present.

PURI
Ingredients
1 cup wheat flour ¼ tsp. salt
Oil for frying

Method
Knead the dough, adding little water and salt. Roll the puris applying uniform pressure. Heat oil and fry the puris. Apply slight pressure while frying. Transfer to a sieve to drain excess oil. Serve hot.

Wheat is rich in B vitamins, iron, protein and fibre.
